Lemon Blueberry Parfait

  • ½ cup plain Greek Yogurt
  • Handful of blueberries
  • 1 Tablespoon Lemon curd (I like Tiptree Brand)

Add the Greek Yogurt to a parfait dish or bowl. Add blueberries. Top with a tablespoon of lemon curd. Lightly blend and serve.

If you want to make this pretty, I suggest serving it in a parfait/dessert glass or Mason Jar. Layer the yogurt on the bottom, spread the blueberries next and top with a dollop of the lemon curd. Place a blueberry in the center of the lemon curd. Take a picture, then enjoy!

Tip

Make them in small Mason Jars or parfait jars and pack them with your cold items in a picnic basket. You can also make these the night before and put them in your refrigerator so family members or guests can help themselves in the morning.
